Persian 2 year old cat meeting doberman puppy

Most cats that are in the home before a puppy arrives will tell the puppy in no uncertain terms that it won't tolerate puppy BS. Do let your cat hiss and tell the puppy off. It's the fastest way he'll learn. You on the other hand, since the puppy is too young to have training or any natural manners, should make dragging a leash in the home mandatory and if the puppy tries to aggravate the cat, you can pull the puppy away using a "no" or "leave-it" command, then re-direct with a toy or tug. Be careful this is timed so that puppy doesn't feel like the toy is a reward for poking at the cat, but rather a better idea. Never allow chase as that intensifies drive to catch the cat. And most important, as @JanS said, always make sure that your cat can go somewhere that the puppy has no access to. We have a laundry room in our house and I made the door to stay open just wide enough for the cats to get through, but not the puppy.
And, as an after thought - Persians are usually pretty mild mannered and gentle. There are some cats that will not stand up to puppy torment and instead run and hide. If this is the case with your cat, you will have to advocate for the cat and be less tolerant of the puppy wanting to play with the cat. Give it a few days for your cat to get use to the new invasion. Since your puppy is coming to you as a little older pup, he will be big enough to hurt the cat, so zero tolerance until you see how it all plays out. I've always had cats and Dobermans. The other dog in the photo above is an extremely high prey drive Dutch Shepherd and she also learned to leave the cats alone - 90% was taught to her by the cats themselves so that made our job easier. Something about animals giving signals to each other seems to work way better than us pounding around screaming No! LOL.
Cat I had was freakin evil.
Tried more than a few times to 'explain' to her that it was not cool to be beating on my girls and it got got me nowhere.

I have three cats and two Dobermans.
One cat wants absolutely nothing with the Dobermans and slinks in the shadows. Really no issues here.
One cat makes herself approachable- sleeps in chairs/couch at Doberman height. She is not hesitant to speed punch either Doberman when she’s had enough. Funny that when she is on top of the couch and a Doberman walks by she is waiting to ambush.
Other cat thinks he is the best friend of both Dobermans. I think he thinks he is a Doberman. He walks with them, sleeps with them and demands to go outside when they are outside. It’s pretty funny actually.
The one big thing with all of them is that Freyja gets excited and will Dober stomp them (rears up like a horse and comes down) Ragnar has grown out of this.
In Ragnar’s younger years he use to terrorize the cats. He is very very prey driven so if any of them tore off through the house (happens all the time) it would trigger his prey drive and off he would go chasing them. If they casually walked by? he would never budge or acknowledge….but the quick movements fired him right up.
Took about 2yrs for Ragnar to settle down from the cats….I think bringing in Freyja to the household helped with that.
Freyja DoberStomping- just have to be extremely aware of where she is, where the cats are and the situation. She doesn’t mean to be a bully or trying to hurt- it is a playful act that can cause serious damage.
We have two cat trees that I merged together that is an easy situation exit for any of the cats.

I call it DoberSlicing.
Where the cat shows no mercy at all on that nose (or noses) and gives not a damn if they leave scars on the offending nose that needed dealing with at the time.

Sounds funny but it's not. A fully armed (has all it claws) cat that is in a bad mood can do a lot of damage in the blink of an eye. Even if the dog was not really doing anything but 'getting to close' it only takes one good swipe and you got a bloody nose to deal with (and hopefully not worse).
At first (when we brought the first Doberman home) were were very diligent about keeping the front claws on that cat trimmed so they were not quite as dangerous but as the cat got older she became much less tolerant of that sort of work on her paws and it became a real chore. Those later in her life trimmings required 2 people to do because she was so difficult.
Was a royal pain training the Dobermans to avoid the grumpy devil cat at all times and stay well AWAY from it. It can be done but is a good bit more work to reduce the risk of any 'accidents'.
If I were to consider it again (bringing a doberman home into a household that already had a cat living there) I would think long and hard about the disposition of the cat first (how is the cat going to behave around the dog) and also how easy it was to do routine nail work on the cat in an effort to help insure no serious accidents happened.

For sure, I agree that cat claws are dangerous, and we do make sure Kaiser doesn't bother our cat and he's very good about not pushing her to the point where she swipes at him. I was referring to the term DoberSlicing being a good one.
