Welcome from Minnesota, USA!
We have at least one other member here from Australia @jazzies mum so maybe she has more ideas where you could check.
I don't know if you have something like Embark available there but you can do a quick mouth swab to see what your own dogs vWD status is.
Unless...
I've heard a lot of horse owners are doing something equivalent to a dremel for hooves these days but I have mixed feelings about that. I could see that in place of a rasp or file but not to use it for the whole hoof when it involves so many things on a horse.
This is from our neighbor across the swamp riding one of the bike trails with his GWP. This is very near the show site where our summer show is.

A couple ringside photos I bought from the photographer at our show. It was hubby's first time in the ring and I think he did a good job with his girl.
No photos but early yesterday morning Elroy was trying to let me know he was having tummy troubles. I didn't get up in time so the poor guy had an accident in the kitchen. I cleaned it up and put it in a bag that hubby set outside near the door. He went to take it to the dumpster a couple hours...
I had one in the late 70's and she was a really sweet girl but I got her as a pup and showed her she could trust people.
This is one of the two of us from back then when she was about 7 months.
Another larger breed I have considered is the Berger Picard since I have met quite a few of them and they are gorgeous.
But I have heard from a few different people, including our trainer that they are difficult and they shed nearly as much as a GSD.
Fun! I don't think any of our Dobermans have had an interest in the frisbee but our Boxer went wild for them and did some pretty high jumps to catch it.
I still see both and there is a beautiful Silken Windhound that comes to our shows.
I agree about the photo of the Irish Setter looking pathetic. We have one lady who comes to the shows from Canada and her dogs are gorgeous.
