Agree with @Tropicalbri's your sitter should have a contact form or create one for him/her with how to reach you, vet information and emergency vet information.

Yes I always do toppers my Princess is a picky eater (Shadow will eat anything) and that’s the only way she will eat her kibble - spoiled yes I know I created a monster. But I don’t mind cooking for them. I just buy extra of whatever protein the family is eating and cook theirs bland.

I always curled the lip under/into the mouth on to the teeth so that she would be biting her own lip. I would just up the pressure if she closed her tried to close her mouth and nip. She learned pretty quickly.

Don’t bother with a vet. We did that the first time and it was awful. I think it lasted about a day total waste of money. Is the breeder offering any support paper instructions/Skype/FaceTime ? Lots of videos on here and YouTube. Do you have all your supplies?
